2019/2020 Domaine de l'Enclos, Chablis 1er Cru, Vau de Vey

The Domaine de l'Enclos consists of 29 hectares of organically grown vines. The winery is located in the heart of Chablis on a large estate, a former residence of the monks of Pontigny Abbey, consisting of a large 19th century building and a partially underground cellar built in 2016.

The vinification is done without any input, without sulphites, with native yeasts and the maturation of the wines in tanks and barrels. The wines are not fined or cold treated. Only light filtration and a moderate addition of sulfite are used before bottling. This Chablis premier Cru comes from Vau de Vey, planted in 1979 and taken over by Romain in 2006. The plot consists of one piece on a steep east-facing slope, organic since 2010.
